#CookWithToluna Baked stuffed peppers

Here is a vegetarian recipe, but you can vary it with finely chopped cooked ham or bacon.
Clean and halve two peppers longways. Remove stem and seeds.
In a bowl, mix breadcrumbs (any kind but wholemeal is healthier) with chopped parsley, onion or scallion, tomato, grated cheddar cheese and a knob of butter.
Warm the oven to 180C and use a baking pan or dish that is non-stick, or else add a small amount of olive oil to the surface.
Spoon the mixture into the peppers to fill them.
Bake for about 20 minutes.
These can be served as a light meal, or added to meat or other main ingredient as the veg and carbohydrate accompaniment. Red or yellow peppers will be sweeter than green, and long red pointed peppers are sweeter still.
