Have you tried cold cucumber soup?

My previous post had a purpose to prepare you for this one - Cold cucumber soup! It's very refreshing, and ideal for hot days like today.

The best thing is that it's quick to make (well, it takes some time to chill it in the fridge before eating), and you can add things you like. I'll give you the basic recipe and options to spice it up :).

You'll need:
2 big cucumbers (or 4 small ones)
400-500 g of natural yogurt
1 clove of garlic
ground white pepper
salt
spring onions
dills
a dash of lemon juice

Preparation:

Mix the yogurt well with pressed garlic, salt, pepper and lemon juice. All chopped cucumbers,chopped spring onions and dill. Mix, refrigerate, and enjoy!

You can also add everything (except the spring onions and dill) in the food processor or use blender to make it smooth. Before serving, sprinkle the soup with chopped onions and dill.

To spice it up you can add half of a chilli, or freshly grated ginger, or mint, or whatever you think that would go well for you.

You can eat it as it is, or you can serve it with boiled potatoes.

Oh, yes, if you use greek yogurt, you need to add water.
