Lamb hot pot recipe as requested by the toluna team

12 pieces neck of lamb
3 onions
4 carrots
two large parsnips
split peas or soup mix (dry pulses) of your choice
1 leek
potatoes (old i use king edwards)
2 oxo cubes
i piece of garlic
salt ans pepper
herbs of your choice i used fresh oregano
(You can add any veg you like)

Fry the meat in a little oil until brown
add 2 pints water and a small amount of the veg salt and pper and the oxo cubes . simmer for a few hours on a low heat.
Drain the fruit into your slow cooker through a sieveand squash to get all the flavour out.
add the meat to the slow cooker and forget about it for a few hours.
remove the meat it should be falling off the bones now just remove all the bones. Then leave the liquid to go cold fat will solidify on the top remove all the fat.
Add the meat back into the liquid with all the veg and pulses taste to see if you have enough seasoning. Leave to simmer in the slow cooker for a couple of hours. Slice the potatoes and bring to the boil in salted water, then switch them off and drain. If your liquid has reduced to much just add some of the potato water to the pot.
Pour the whole lot into a pyrex dish (or any dish) place sliced potatoes on the top with knobs of butter and a little salt and pepper. Put it in the oven on 180 -200 untill the potatoes are brown and crispy. You can make dumplins too if you wish but we prefer a chunk of crusty bread with it . yum yum

Of course it's coming up to the time for me to 'burn' my evening meal anyway. Nothing as elaborate as your delicious lamb hot pot of course. A steak pie, with more chips than you can imagine covering most of the plate, along with peas, carrots and sliced up onion for me tonight.
